
Caramelized-Honey Delicata Squash Salad
Roasted delicata squash gets caramelized with honey and olive oil, then tossed with a warm brown-butter dressing, juicy cherry tomatoes, fresh parsley, tangy goat cheese, and za’atar. A colorful salad that’s equal parts comforting and vibrant.

- Preheat the oven to 425°F. Line a baking sheet with parchment paper. Wash the delicata squash, slice off the ends, then cut in half lengthwise. Scoop out the seeds and slice into ½ inch thick half-moons.
- Toss in a bowl with salt, honey, and olive oil until well-coated. Spread slices in a single layer on the prepared baking sheet, and roast for 20–25 minutes, flipping halfway, until squash is golden brown and tender with crisp edges.
- For the dressing, cook brown butter, olive oil, and honey in a pan over medium-low heat until the mixture begins to brown and bubble. Once the mixture smells caramelized, turn off heat and immediately add tamari, rice vinegar, sesame oil, and lemon.
- Mix in cherry tomatoes, parsley, goat cheese, za’atar, and the dressing to taste. Finish with fresh black pepper and serve.
