Caramelized-Honey Delicata Squash Salad

Roasted delicata squash gets caramelized with honey and olive oil, then tossed with a warm brown-butter dressing, juicy cherry tomatoes, fresh parsley, tangy goat cheese, and za’atar. A colorful salad that’s equal parts comforting and vibrant.

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper. Wash the delicata squash, slice off the ends, then cut in half lengthwise. Scoop out the seeds and slice into ½ inch thick half-moons.
  2. Toss in a bowl with salt, honey, and olive oil until well-coated. Spread slices in a single layer on the prepared baking sheet, and roast for 20–25 minutes, flipping halfway, until squash is golden brown and tender with crisp edges.
  3. For the dressing, cook brown butter, olive oil, and honey in a pan over medium-low heat until the mixture begins to brown and bubble. Once the mixture smells caramelized, turn off heat and immediately add tamari, rice vinegar, sesame oil, and lemon.
  4. Mix in cherry tomatoes, parsley, goat cheese, za’atar, and the dressing to taste. Finish with fresh black pepper and serve.
